Components :
4g Saviordi Biscuits 
Mascarpone Mousse 
Matcha Powder  

Matcha Recipe
Ingredients:
10g Matcha Powder 
100g Hot Water  

Method: 

  1. Boil water to 80 degrees.
  2. Whisk the matcha powder into the hot water unit it comes together.  

Mascarpone Mousse Recipe
Ingredients:
40g Water 
150g Caster Sugar 
125g Egg Yolk 
500g Mascarpone 
250g Whipping Cream  

Method:  

  1. In a large bowl whisk the egg yolks until pale and soft.  
  2. In a pan bring the sugar and water up to 121 degrees. 
  3. Slowly pour the sugar syrup over the egg yolks and whisk on a high speed until the mixture has cooled slightly.  
  4. Separately whisk the mascarpone and cream until soft. 
  5. Fold the cream through the warm egg mixture.

 

Assembling the Matcha Tiramisu 

  1. Start by briefly dipping half of your Saviordi Biscuits on the matcha syrup, and the line them in the base of your dish. 
  2. Then spread over half of the mousse on top of the biscuits.  
  3. Repeat these stages once more to build your tiramisu.  
  4. Finish off by dusting over matcha powder to give the tiramisu a nice green colour.
