Plum Clafoutis

With the Bank Holiday right around the corner, we’ve crafted a new and exciting dessert that is easy to make at home. We love putting our unique twist on classic recipes, and today we’re transforming a traditional French dessert into a delightful late-summer treat!

Clafoutis is an elegant and simple French dessert. While the classic version features cherries, our fabulous Executive Pastry Chef, Daniel Pearse, has created a version that showcases the late summer bounty: Plum Clafoutis. With their sweet-tart flavour and beautiful colour, plums are the perfect choice for this dish. Enjoy! 

Ingredients

120g Plain Flour
240g Caster Sugar
1 Vanilla Pod
6 Whole Eggs
660g Whole Milk 
40g Kirsch 
Plums 

5g Icing Sugar
20g Crème Fraiche or Whipped Cream 

 

Method

  1. Whisk the eggs and sugar together. 
  2. Add the milk, vanilla and kirsch to the egg and sugar mixture. 
  3. Then, fold in the flour and set aside the batter mix. 
  4. Meanwhile, add butter and flour to your skillet then add the plums.
  5. After, pour the batter mix into the skillet, and bake at 180 degrees for 20 minutes until golden brown with a light wobble in the middle.  

Assembling the Plum Clafoutis:
To serve, dust with icing sugar and a large spoonful of crème fraiche or whipped cream.
