SPICED CROWN PRINCE SQUASH SOUP

Refuel the body with goodness and try our Head Tasting Chef’s recommendation for the perfect Autumn simmer. This crown prince squash soup is spiced with warming flavours of chilli, garlic, ginger and cumin, finished with fresh coriander. 

Simply dice the squash and roast in the oven with a dash of olive oil for 30-40 minutes until soft.

Transfer into a large saucepan and add the chilli, garlic, ginger, cumin and blend them together to make a purée. Top up the saucepan with vegetable stock until you reach your desired consistency.

Simmer on a low heat until piping hot. Garnish with freshly chopped coriander and serve with a side of crusty bread.
